What DVD set has the beginning of .Hack?
Does Subbing means the characters continue to speak in Japanese but with subtitles in English and Dubbing mean they speak in English?

It means exactly what you are saying. But there can also be subs and dubs for other languages too.
I don't have any of the .Hack DVD's so I couldn't tell you. I've only seen the .hack//sign anime on t.v.
